Roasted Stuffed Bell Peppers

Ingredients

  • 4 large bell peppers (any color)
  • 1 cup quinoa, rinsed and cooked
  • 1 lb ground turkey or beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup diced tomatoes
